- 8 large egg whites or 1 cup liquid egg whites
- 1/2 cup cottage cheese
- 1/4 cup shredded Monterey Jack cheese
- 1/4 cup diced red bell pepper
- 1/4 cup fresh spinach, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 Cooking spray
Preheat the oven: Preheat to 325°F (160°C) and grease a muffin tin with cooking spray.
Blend the base: In a blender, combine egg whites, cottage cheese, Monterey Jack cheese, salt, and pepper. Blend until smooth.
Fill the cups: Pour the mixture evenly into the muffin cups, filling each about 3/4 full.
Add toppings: Sprinkle chopped red bell peppers and spinach into each cup. Stir gently to mix.
Bake: Bake for 20-25 minutes or until the egg bites are set and slightly golden on top.
