  • 1 Mixing bowl
  • 1 Spoon or spatula

Ingredients

  • 1 cup cottage cheese blended until smooth
  • 1/2 cup almond flour
  • 1/4 cup oat flour
  • 2 tbsp peanut butter or almond butter
  • 3 tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • 1/4 cup mini chocolate chips
  • A pinch of salt

Instructions

  • Blend the Cottage Cheese: Blend cottage cheese in a food processor or blender until completely smooth and creamy.
  • Mix Dry Ingredients: In a mixing bowl, combine almond flour, oat flour, and a pinch of salt. Stir to mix evenly.
  • Add Wet Ingredients: To the dry mixture, add the blended cottage cheese, peanut butter, maple syrup, and vanilla extract. Stir until a smooth dough forms.
  • Fold in Chocolate Chips: Gently fold in the mini chocolate chips or other desired mix-ins.
  • Chill (Optional): For a firmer texture, refrigerate the dough for 15-20 minutes before serving.
  • Serve: Scoop into bowls or enjoy straight from the mixing bowl.

Notes

  • For a vegan version, use plant-based cottage cheese and maple syrup instead of honey.
  • Store in an airtight container in the refrigerator for up to 3 days or freeze for up to 1 month.
  • Experiment with mix-ins like dried cranberries, chopped nuts, or shredded coconut for variety.
